Earlier this week I wrote about the DCI Gang. They were at our home last night for the BBQ social. As predicted, there was good food and even better conversation. It is a group who just picks up where they last left off.
The husband was the grill master on his smoker/charcoal grill. He made some mean dogs and burgers. His excellent pasta salad was on the menu too.
I put together a charcuterie board of cheese (thanks Carol the cheese lady) and veggies. And, of course, I had to make some desserts. At first it was just going to be a peach pie using filling from my canning and a banana cream pie. It just didn’t seem like it would be sufficient. So, I made some round brownie boats, filled with my homemade apple butter, topped with banana butter cream frosting.
There was a moment of panic when I realized I didn’t have enough powdered sugar. Usually I have an extra bag or two stored away. Not this time. I had to improvise. At some point I’d read how confectionery sugar was made and decided to give it a try. I put some caster sugar in our grinder and let it run for several minutes. Thankfully it worked. I had made just enough to finish the frosting.
Needless to say, we all had a good time. By the end, a good chunk of the food had been eaten. I was glad to see this because had it not, we would have been eating leftovers for the next week or two.
